Potatoes are one food that I can never get enough of. Any potato in any form is good to me; sweet potatoes, purple potatoes, mashed potatoes, or twice baked potatoes… you name, I’ll eat it. As I always say “I have yet to meet a french fry that I don’t love.”
I love making these rustic potatoes with a grilled chicken dish or even as a side with brunch. These potatoes are also the perfect additional to any Fall meal. They curb all of my potato cravings without all of the calories that come from a large stack of french fries. Most importantly, they are super easy to make!
How you cut your potatoes is up to you, but cutting them into small semi-thin slices will shorten your baking time. This can be a game changer since it can be 25-35 minutes to achieve the perfect mix of a crisp exterior and soft interior. You can also chop up an onion or dice up some garlic for some added flavor.
To get the rustic flavor, I mix a few tablespoons of olive oil (I love Pompeian) with an Italian seasoning mix that I created. I mix salt, pepper, basil, garlic powder, rosemary and thyme. What’s great about this step is that you can add any flavors you want by switching up the seasonings.
Next step is grabbing a fork and eating as many pieces as you can! How easy is that?
